Executive Chef Cesar Vega from SUSHISAMBA Miami Beach is cooking up an entire roasted suckling pig for the entire family on December 24th and 25th.
The Holiday Cochinillo or Whole Roasted Suckling Pig is carved and served tableside with yuzu-honey sweet potatoes, sake braised swiss chard and crispy bok choy with apple blossoms. Following the feast, guests can choose from two of our signature desserts served family-style. To complement the experience, guests can enjoy a Magnum bottle of Dewatsuru Kimoto Junmai Sake and unlimited Cusqueña beer. The cost is $169 per person (5 person maximum) plus an additional $150 per group for the beverage pairings. Tax and gratuity is additional. 72 hours’ notice and reservation required.
We got a chance to ask Chef Cesar what makes SUSHISAMBA’s cochinillo so unique? SUSHISAMBA’s Holiday Cochinillo features the flavors of Japan, Brazil and Peru. The marinade incorporates yuzu – a Japanese citrus fruit, lemongrass, cilantro and aji amarillo – a South American yellow pepper sauce. The sides are also inspired by our tri-cultural coalition with yuzu-honey sweet potatoes, sake braised swiss chard and crispy bok choy. Our goal was to put a spin on seasonal standards with a unique feast for family and friends inspired by Christmas traditions in South America.
