Loba is set to open in the MiMo district. Loba will join the ranks of Blue Collar, Michy’s, The Federal, Taperia Raca and more.
Loba is a Latin gastropub concept with New American influences. Loba is a passion project of Jessica Sanchez, who left the corporate world to pursue her dream of owning her own restaurant.
Jessica has has partnered up with Florida International University’s Hospitality Management Program to ensure Loba is run by chefs from the University and to give students an opportunity for first-hand experience. Loba will provide an experimental atmosphere for students, students, in exchange, will execute the operation of the restaurant.
We have gotten a peek at the menu and the menu looks amazing! The menu is being overseen by Jessica, her mother Libia E. Sanchez, former Patacon owner and Jeziel Colon, former sous chef at MC Kitchen.
Some of the items on the menu include “Ode to Wilbur,”e18-hour sous-vide pork belly with butternut squash puree, pickled fresno chilis, frisee salad and toasted pine nuts; “Butcher’s Cleanse,” porcini- rubbed ribeye with gorgonzola butter and frites; “Orwell’s Dystopia,” animal-farm inspired squash broccolini lasagna, local burrata, marscapone and grated parmesan; and “Slim Ursula,” chipotle-charred baby octopus with warm lentils, parsley and preserved lemon.
Jessica plans to open Loba in May.
