Tom Yum Fried Rice with Shrimp

Prep Time: 10 minutes Cooking Time: 20 minutes


  • 16 oz of cooked jasmine rice
  • 1.5 oz of vegetable oil
  • 5 Shrimp
  • 1 teaspoon chopped garlic
  • Shredded red onion
  • Cherry tomatoes
  • Mushrooms
  • Lemongrass
  • Galanga
  • Lime leaves
  • 1 teaspoon of Tom Yum paste
  • 1 Egg
  • 1 teaspoon of butter
  • 2 oz of Chef So’s special sauce - (Oyster sauce 50 percent, mushroom sauce 10 percent, soy bean sauce 10 percent, sweet black soy sauce 10 percent sugar 20 percent) - [Or just soy sauce & oyster sauce will do]



Heat up 1.5 oz of vegetable oil in a wok or pan over medium high heat.


Add the egg and stir until cooked.


Add shrimp, garlic, red onion, mushrooms, lemongrass, galanga, and lime leaves and cook half way through until an aroma comes through.


Add the cooked rice, tomatoes, butter, and Tom Yum paste.


Cook until rice is golden brown then add final sauce(s) and mix it up.


Garnish with scallion and cilantro.


Serve with lime and cucumber.
