Verde x La Mar Collaborative Dinner at PAMM

Together with Chef’s Kaytlin Dangaran of Verde & Diego Oka of La Mar by Gaston Acurio, Verde will be hosting this dinner in honor of the opening of “Toba Khedoori” at PAMM.

The two chefs have drawn inspiration from the works of Toba Khedoori to prepare a culinary tasting for this special occasion. Starting at 7 p.m., guests will enjoy passed canapés followed by a four -course meal with wine pairings.

Passed Canapes
Baharat Grissini, Seared Lamb, Spiced Yogurt
Za’tar flatbread with Roasted Eggplant and Tomato
Thinly Sliced Fluke with Aji Amarillo and Yogurt Leche de Tigre, Cancha and Choclo

First Course: Causa Cangrejo, whipped potatoes, beets puree, blue crab, tobiko, avocado, huancaina sauce and cherry tomato with quail egg

Second Course: Roasted Heirloom Carrots, Baharat Spiced Yogurt and Watercress

Third Course:
Grilled Octopus with Peruvian Peppers, Arab Spices, Aji Amarillo, Potato Creme and Botija Olive Aioli
